RESEARCH INTEREST

   Bioprocess Systems Laboratory primarily concerns efficient production of safe value-added quality food products by incorporating techniques of physical chemistry and biological tools into food and agricultural processing.

   Our research area covers

- Enzymatic conversion of starched from various sources into valuable functional food carbohydrates

- Exploration of structure-functionality relationships of the novel carbohydrate-based food materials

- Process development for quality enhancement of carbohydrate-based foods

 

 Related techniques that we deal with include production and purification of microbial enzymes, various analytical techniques for physical chemistry, such as rheology, texture analysis, DSC, DMTA, ITC, XRD, NMR(MRI) and FT-IR, molecular structure analysis using zeta sizer, MALLS, GPC, and HPAEC, and microscopic analysis using SEM, cryo-SEM, and confocal microscopy.
